Why does altitude matter for wine?

Higher vineyards get a wider swing between day and night temperature, which slows ripening and keeps acidity. At 1,200 metres in a subtropical latitude the effect is pronounced, and it is why these wines taste fresher than the climate would suggest.

What does the ecological label mean here?

The Spanish term for certified organic farming: no synthetic pesticides or fertilisers, with inspection behind it. It is a certification rather than a marketing word.

Where is Vilaflor?

In the southern uplands on the road from the coast to Teide National Park, at roughly 1,400 metres. It is the highest village on the island and about forty minutes above the southern resorts.

Can I visit the estate?

It opens to visitors during the day, and a call ahead is sensible on a working farm. Combining it with a Teide trip is easy, since the road up passes through Vilaflor.

What is volcanic pumice soil like to grow in?

It drains very fast, stores daytime heat and releases it overnight, and holds almost no organic matter. Vines have to work for water, which concentrates what ends up in the glass.

Which denomination is this?
